Strawberries are in absolute abundance right now. The markets are spilling over with displays of scarlet berry fruit. You’d be mad not to take an extra punnet home to whip up into a batch of these scrumptious scones.
What you’ll need
2 1/4 cups plain flour
1 tablespoon baking powder
4 tablespoons caster sugar
1/2 teaspoon table salt
85 grams cold, unsalted butter chopped into small cubes
1 cup chopped ripe strawberries
1 cup pouring cream
First heat your oven to 220c
Now sift your flour, baking powder, sugar and salt into a large bowl.
Then cut/rub in the butter with your fingertips – working quickly. If it’s a warm day consider using two knives, you don’t want the butter to melt. Combine till mixture resembles a coarse meal, with a few larger butter bits. Then toss through your cut strawberries.
Then using a spoon or spatula you’ll stir in the cream till it all comes together, this wont take long don’t over mix you don’t want to mush your berries!
You’ll generously flour a clean bench top then tip out your dough bits and bring it all together with a very light knead. It will feel crumbly and your strawberries will make your dough a little wet and unruly. Take a deep breath and go with it.
Now all you need to do is put on the kettle, brew a cup of tea and enjoy.
